This cava is produced near Barcelona, in Penedes, the leading cava producing region in Catalonia and Spain and normally sells only locally. The vineyards form part of the Baldus estate, a farm operation that dates back to the 17th c. This sparkling wine is made by the descendants of Josep A. Jane Santacana, following the so called traditional method, the process that produces the bubbles with a second fermentation inside the bottle, the same method used by most international, premium sparkling wines. Matured in bottle for 20 months, it has plenty of layered aromas to hand hold your food and it is otherwise a refreshing pleasure to drink it on its own. Brut Nature indicates that no sugars have been added before leaving the winery and it is therefore naturally very dry.
